Sausage and Pepper Omelette

Sausage and Peppers, a classic Italian combo. This tastes almost too good for the minimal effort involved.

This is all about the filling. Make the physical omelette in any style you like.

Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

Season everything to taste with salt and pepper.

This one is a little tricky to do as an individual portion. Either cook multiple omelettes or save the extra filling and eat later on its own.

  • 1 Egg, beaten
  • 1 Italian Sausage
  • 1/4 Red Pepper, sliced thin
  • 1/4 Green Pepper, sliced thin
  • 1/4 Shallot (or small red onion), sliced thin
  • 1/4 Tomato, finely chopped
  • 1/4 tsp Fennel Seed, ground (or crushed in a mortar and pestle)
  • Dried Chili Flakes, to taste
  • Provolone Cheese, sliced
  1. Remove sausage casing, tear the meat into small pieces, and cook in a pan at medium heat until cooked through.
  2. Add peppers and shallot, and continue to cook for a minute.
  3. Add chopped tomato, fennel and chili flakes and cook until most of the liquid has evaporated.
  4. Make omelette in preferred style, placing sliced cheese inside to melt as the egg cooks and fill with sausage mixture before folding.
