Hungover? Game day? Maybe just craving some deep-fried bar snacks for breakfast? This ones for you. Everything that is amazing about jalapeño poppers but in omelette form.

‘Nuff said.

This is all about the filling. Make the physical omelette in any style you like.

Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

Season everything to taste with salt and pepper.

  • 1 Egg, beaten
  • 1 strip Bacon, diced
  • 2 tbsp Cream Cheese, softened
  • 1 tsp Mayo or Yogurt
  • 1 Jalapeño, seeded and diced
  • Salt & Pepper
  • 1 tsp Panko Bread Crumbs (optional)
  • Crispy Fried Shallots (optional)
  1. Cook bacon on medium heat until crisp. Remove from pan and drain excess oil, reserving a bit for later.
  2. Turn down heat, add jalapeños and cook for a minute, do not brown. Add cream cheese and Mayo (or yogurt) and stir until warmed through and soft.
  3. Remove from heat, stir in bacon bits and season.
  4. Heat pan with a little bacon fat, sprinkle panko crumbs on one half of the pan, and pour egg over top. Fill with cheese mixture and fold once desired doneness is reached.
  5. Top with crispy fried shallots or extra bacon bits.
