Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

- 1 Egg, beaten
- 1 strip Bacon, diced
- 2 tbsp Cream Cheese, softened
- 1 tsp Mayo or Yogurt
- 1 Jalapeño, seeded and diced
- Salt & Pepper
- 1 tsp Panko Bread Crumbs (optional)
- Crispy Fried Shallots (optional)
- Cook bacon on medium heat until crisp. Remove from pan and drain excess oil, reserving a bit for later.
- Turn down heat, add jalapeños and cook for a minute, do not brown. Add cream cheese and Mayo (or yogurt) and stir until warmed through and soft.
- Remove from heat, stir in bacon bits and season.
- Heat pan with a little bacon fat, sprinkle panko crumbs on one half of the pan, and pour egg over top. Fill with cheese mixture and fold once desired doneness is reached.
- Top with crispy fried shallots or extra bacon bits.
