I get it, this one totally sounds like stoner food. Even that photo looks a little psychedelic. But I assure you that no weed gummies were harmed in the making of this omelette.
This was a completely sober invention that came from the trend I’ve seen involving peanut butter and bacon on burgers. And while I’ve yet to try that myself, the flavour combination piqued my interest.
To my partial surprise, this omelette is delicious, though maybe a little messy.
The chilli crunch is optional but gives an extra dimension that helps.
This is all about the filling. Make the physical omelette in any style you like.
Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

- Butter
- 1 Egg, beaten
- 1 thick Bacon strip, cooked crisp and roughly chopped
- 1 tbsp Peanut Butter
- 1 tsp Soy Sauce
- 1 splash Lime Juice, or to taste
- Salt and Pepper, to taste
- Dried Chilli Oil, to serve
- Crispy Fried Shallots, to serve
- Sliced Green Onions, to serve
- In a small pan on low heat, mix together peanut butter, bacon, soy sauce and lime juice. Stir until combined. If mixture is too thick, add a few drops of water at a time until you have a smooth paste.
- Season with salt and pepper, remove from heat and set aside.
- Heat butter in a separate pan and add egg. When the egg begins to set slightly, add the peanut butter mixture, carefully dropping it around the egg without tearing it.
- Top mixture with crispy fried shallots, fold omelette in preferred style and serve.
- Unleash your inner Jackson Pollock and garnish with chilli oil and green onions.
