This one packs a lot of flavour but despite the name is actually quite mild on heat. It’s perfect when you need to use up some leftover chicken.
You can use mild pepperoncini chillies, or jalapeƱos. Both work. Using pickled chillies is the important part here.
This is all about the filling. Make the physical omelette in any style you like.

- 1 Egg, beaten
- 1 tsp Olive Oil
- 1/4 cup, cooked Chicken, shredded
- 1 tsp Red Onion, finely chopped
- 1 tbsp Pickled Green Chillies, finely chopped
- Splash of Green Chilli sauce
- 1 tsp Cilantro, finely chopped
- 1 tbsp Mozza or Cheddar, shredded
- A few slices Avocado
- Green Onion slivers to garnish
- Heat oil in pan at medium heat and add onions, cooking until soft. Add chillies and chicken and cook for another minute.
- Stir in hot sauce and cilantro and set aside.
- Sprinkle cheese on egg as it cooks and spoon filling over that. Top with avocado slices and fold.
- Sprinkle with green onions and a little hot sauce to trick people into thinking you’re fancy before serving.
