Literally: typical breakfast in Spanish. It’s on nearly every menu in Central America, and the meal itself varies little.
It’s like a Denny’s Grand Slam in America, or a Full English in… England. It’s the quintessential breakfast spread in countries like Guatemala, El Salvador, Nicaragua and many others.
And something I’ve enjoyed more times than I can count. Easily in the triple digits.
The only two ingredients here that might be tricky to find if you don’t have a Latin market nearby are the queso fresca and the plantain. You easily can replace the queso with feta with little change but the plantain could be tricky.
At my Latin market I can buy pre-roasted plantains, frozen. This saves a bunch of work and trying to find fresh at just the right ripeness and having to roast them myself.
In an absolute pinch, you could try using an unripe banana. I’m not saying it will work. It might be awful. And it’s probably easier to omit the plantain altogether if you can’t find it.
But hey, it’s fun to play around, right?
This is all about the filling. Make the physical omelette in any style you like.
Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

- Butter
- 1 Egg, beaten
- 1 1/2 tbsp Queso Fresca, crumbled
- 1 1/2 tbsp Refried Beans
- 1 1/2 tbsp Roasted Plantain, roughly chopped
- 1/4 large (or 1/2 small) Avocado, sliced
- Salt & Pepper, to taste
- Hot Sauce, to serve
- Heat the refried beans and plantain. Use a pan, microwave, whatever. No need to do anything fancy here. If you want, you could cook the beans in a pan with a little garlic and onion but it’s not necessary. Just make sure they’re seasoned. Set aside.
- At medium-low heat, melt the butter in a pan. Add the beaten eggs and sprinkle with a little salt and pepper. Cook for around 30 seconds.
- Add the queso fresco and refried beans. Top with plantain and sliced avocado. Continue cooking until egg is at your desired doneness.
- Fold in preferred style and serve with your favourite hot sauce and a warm white bun if you wanna be authentic.
