What’s the worst possible thing you could name food? I think I nailed it.
This one is a simple way to use up a few leftovers, the odds and ends sitting in your fridge. However, it’s not quite as straightforward as tossing in a bunch of random ingredients. There’s a method to this madness.
You can use pretty much anything you want, but there needs to be balance of flavours and textures.
This is all about the filling. Make the physical omelette in any style you like.
Amounts are not exact, just suggestions. These recipes are general guidelines roughly aimed towards single egg, individual portions unless otherwise mentioned. Adjust as necessary. Play around. Have fun.

- 1 Egg, beaten
- Bacon, diced (saltiness, a bit of sweetness)
- Green Cabbage, shredded (texture)
- Red Onion, sliced thin
- Olives, diced (umami, more salt)
- Spicy Pickled Carrots, diced (acidity & heat)
- Spinach, roughly chopped
- Cheddar, grated
- Crispy Fried Shallots (crunch)
- Hot sauce of choice
- Cook bacon until crisp, remove from pan and drain most of the fat.
- Add cabbage and onions to pan and cook until starting to brown.
- Remove from pan, stir in olives, carrots and spinach. Let cool for a minute.
- Clean pan, reheat and add a splash of leftover bacon fat.
- Stir in egg mixture, top with cheese and cook until desired doneness. Top with crispy shallots and serve.
